Mexican Abalone are all Natural and Delicious
Mexico has a very long coastline but abalone only grow in a very limited area along the west coast of the Baja California peninsula.
Abalone are highly valued and are one of the four treasures of Chinese cuisine. However, over-fishing and poaching have reduced wild populations to such an extent that they are now rare and expensive and most abalone consumed are now farmed.

To guarantee sustainability, respective federal laws regulate the harvesting of wild Mexican abalone. The Government grants licenses to ten fishermen cooperatives stipulating area, season, quantity and size.
Two abalone species grow in Mexico; Yellow Abalone (Haliotis Corrugata) and Blue Abalone (Haliotis Fulgens). Yellow abalone are smaller and grow in deeper waters than blue abalone. Both have a very pleasant, delicate and sweet flavor and the meat has the typical abalone bite. They are packed in the eye-catching black and red cans respectively of the California Mexico brand.

In spring, abalone are plumb and at their best. At other times, they are weakened from the winter and from spawning. All abalone sold under the California Mexico brand are harvested between March and June only. Mexican abalone are all natural, they are not bleached and need no additives or flavor enhancers.
